The Dozier’s Sausage Biscuit Bite Recipe

I don’t quite remember the first time I had a sausage biscuit bite or “sausage ball” as they are often called. They have just been something I’ve always known and a go to food that has accompanied me to many baby showers, wedding brunches, and about a million weekend and weekday mornings in my own home. As we were dreaming up items to bake in our coffee shop, these little savory treats were top of the list and, if you’ve ever been to Root House, you know how fast our Sausage Biscuit Bites sell out. They are the perfect pairing of the rich flavors of seasoned sausage with the flaky, buttery goodness of a biscuit. It’s a combination that is both comforting and indulgent, making each taste a delightful burst of goodness. These bites are perfect as a snack, appetizer, or a quick on the go breakfast on those busy mornings. Dip them in mustard, top them with grape jelly (I think that is a southern thing), or eat them just as they are fresh out of the oven. Always serve warm.

INGREDIENTS

  • 3 cups Bisquick

  • 1/2 tsp crushed pepper

  • 1/4 tsp cayenne pepper

  • 1/2 tsp mustard powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 16 oz shredded cheese (room temp)

  • 1 lb Hot Jimmy Dean Premium Pork Sausage (room temp)

  • 1/4 cup water (if needed)

  • 6 tbsp salted butter

  • 1 tsp garlic powder

INSTRUCTIONS

1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a large bowl, combine Bisquick, crushed pepper, cayenne pepper, mustard powder, salt, and black pepper. If want less spicy, reduce red pepper and cayenne. Mix until well combined.

3. Add shredded cheese and sausage to the flour mixture. Use mixer with paddle attachment stirring on medium low until combined. If needed- gradually add 1/4 cup of water, mixing until the dough starts to come together. Approximately 3-5 minutes. Do not over mix.

4. Form dough into 2-inch shaped balls and place them on the prepared baking sheet.

6. Bake for 20-25 minutes, or until golden brown.

7. Meanwhile, melt butter on the stove or in the microwave. Stir in garlic seasoning after melting.

8. Once biscuit bites are done, brush them with the melted butter mixture immediately. Let cool for about 5 minutes before removing from the pan.

 

NOTES:

- For a gluten-free version, substitute the Bisquick for 2 boxes of gluten-free Red Lobster biscuit mix and use 1 cup of water.

- Always use Jimmy Dean Sausage…because my dad always said so. You can use either Regular Jimmy Dean or Hot Jimmy Dean Premium Pork Sausage. Hot sausage is preferred for extra flavor.

-The closer to room temp the ingredients are, the easier they combine.

Pro Tip: Use restaurant gloves when handling the raw sausage. If you don’t have a mixer, using gloved hands works well to combine ingredients.
